How to choose cleaning chemicals for food machinery?

1. Determine the Cleaning Goal

  • Alkaline-based cleaners are suitable for oil and protein residues.
  • Acidic cleaners are preferred for mineral and lime deposits.
  • Neutral or food-safe cleaners can be used for general surface dirt.

2. Food Contact Suitability

  • Choose NSF or FDA approved, food safe products.
  • Prefer products that leave no chemical residue and are safe after rinsing.
  • Ensure compliance with HACCP or GMP standards.

3. Equipment and Material Compatibility

  • If machines contain stainless steel, aluminum, plastic, or silicone, the chemical should not harm the material.
  • Abrasive or highly alkaline/acidic cleaners can cause corrosion in some metals.

4. Usage Conditions

  • Temperature and contact time must comply with manufacturer instructions.
  • If automatic cleaning is done with CIP (Clean-In-Place) systems, chemical compatibility with the system is important.
  • Ease of rinsing and water solubility should be checked.

5. Concentration and Dosage

  • Using too much chemical increases costs and raises the risk of residue.
  • The recommended concentration and contact time should be applied for sufficient effectiveness.

6. Health and Safety

  • PPE (gloves, goggles, mask) must be used.
  • Inhalation of chemicals in vapor or spray form should be prevented.
  • Flammable or toxic chemicals must be stored properly.
